About Flybridge
Five courses. $155. Wednesday to Saturday only. Flybridge sits at the top of the Yacht Club tower at The Boca Raton, the 1926 resort at 501 E Camino Real, and it opened in 2023 as the property's most ambitious dining room. There are only a few tables, each facing a glass-enclosed kitchen, so the experience reads more like a chef's counter than a restaurant floor.
Executive chef Peter Annewanter runs it. He arrived from the Vortuna Health Resort in Bad Leonfelden, Austria, with earlier stints at the five-star Hotel Bergergut and at Elounda Mare, a Relais & Châteaux property in Greece — more than 25 years across fine-dining and Michelin-starred kitchens. For a steak-and-lobster night instead, Boca sends you to Chops Lobster Bar.
The Kitchen
The seasonal menu is seafood- and vegetable-forward. A recent five-course ran from smoked tuna tartare with Florida mango, cucumber and house boudin noir, through a lobster consommé poured over handmade lobster ravioli, to a wagyu picanha with a beef-cheek dumpling and chive aioli, before a chestnut-and-chocolate dessert called Autumn Forest. A full vegetarian tasting mirrors it course for course.
The $155 covers the prix-fixe; an artisanal cheese course is a $25 supplement, and a 20% service charge and 7% Florida tax are added. Because the kitchen is glass-walled and feet away, the cooks finish plates in front of you and talk through each course.
The Room
The dining room is small and low-lit, wrapped in windows over the Intracoastal Waterway and the ocean beyond. Dress is Resort Elegant — collared shirt and trousers, jackets preferred; no shorts or flip-flops — and valet parking is complimentary. Seatings run Wednesday to Saturday, 5:30 to 8:30 pm, and the full menu takes about three hours.
Best for an anniversary
Flybridge is built for an anniversary or a proposal: a two-seater counter, a long tasting menu and water views make it inherently romantic. It also lands well for impressing a client when the resort address is the point.
