About STAY

STAY sits in a colonial-style villa at the far end of One&Only The Palm, on the West Crescent of Palm Jumeirah, with a private dock and tropical gardens around it. Yannick Alléno opened it as the Dubai outpost of his STAY concept; chef de cuisine Renaud Dutel runs the kitchen day to day. It took two Michelin stars in the inaugural Dubai guide of 2022 and has held them since. Two set menus run the evening: the four-course Émotions at AED 900 and the six-course Expérience at AED 1,250.

The Kitchen

Alléno built his reputation on two ideas, and both are on the plate here. The first is his sauce work — what he calls extraction, a cold method that concentrates flavour without long reduction, and it is the backbone of the savoury courses. The second is the Pastry Library, the dessert station that has been copied across the city and remains the dish guests describe afterward. Dutel keeps the cooking disciplined and French rather than chasing Dubai's appetite for spectacle.

The format is fixed menus, not à la carte, which keeps the kitchen tight and the standard even across a full room. The Expérience at six courses is the proper introduction; the Émotions at four is the lighter way in. The cellar is large and the prepayment policy tells you the restaurant runs on reservations rather than walk-ups. For a two-star room in a resort, the cooking is more serious than the setting suggests, and the sauces are the reason to make the drive.

The Room

A high-ceilinged villa dining room with crystal chandeliers, dark wood, and views over the gardens to the water. The light is low and warm, the tables generously spaced, and the sound level stays calm even on a full night — this is the quiet end of the Palm, not a Marina party room. The terrace and the dock are the seats to request. Dress is smart; Dubai runs cooler indoors than you expect, so bring a layer. The pacing is unhurried, built for a long dinner.
