Dar Roumana — "house of the pomegranate" — is a restored Fassi mansion deep in the Fez medina, one of the pioneering guesthouses to bring a serious kitchen to Fès el-Bali. The dining room sits in a courtyard of zellij tiling, carved cedar and hand-painted plaster, with a rooftop terrace that looks out across the labyrinth of the old city. With only five tables, it is among the most personal fine-dining rooms in Morocco.
