Dutch-born chef Richard Ekkebus has led the kitchen since 2005, and the team also holds a Michelin Green Star for sustainability, awarded for a fourth straight year.
Ekkebus stripped dairy and gluten from his cooking several years ago, recasting classical French technique around immaculate produce rather than butter and cream.
The Kitchen
The signature is sea urchin in lobster jelly with cauliflower and caviar — a dish that has defined Amber for over a decade — alongside set menus built on aka uni, Ping Yuen chicken and blue lobster.
