About Sushi Shikon

Eight seats, one cypress counter, omakase only — Sushi Shikon is the most exclusive sushi room in Hong Kong, and the only one to hold three Michelin stars. It has done so every year since 2014. The fish is flown in daily from Tokyo's Toyosu market, and the meal runs from around HK$4,000 a person.

Shikon is the Hong Kong outpost of Masahiro Yoshitake's three-star Sushi Yoshitake in Tokyo, and it cooks to that lineage's Edomae discipline. Since 2019 it has occupied a spare, low-lit room inside the Landmark Mandarin Oriental at 15 Queen's Road Central. This is Edomae sushi at the very top of the global ladder.

The Kitchen

The kitchen follows the Yoshitake method: warm shari seasoned with red vinegar, fish aged and cured rather than served raw-fresh, each piece brushed with nikiri and set down one at a time. The marinated tuna — akami zuke — and the simmered anago that closes the savoury run are the pieces by which the counter is judged. Toyosu-flown uni and a famously rich tamago round out the omakase.

Yoshiharu "Kaki" Kakinuma led the counter for years and carried the three stars through edition after edition before returning to Japan in 2025; the kitchen now continues under his trained successor. The room has held three Michelin stars without interruption since 2014, making it Hong Kong's benchmark for Japanese fine dining.

The Room

The counter seats just eight, carved from a single length of hinoki cypress and lit like a stage. It is quiet enough to hear the knife work and intimate enough that the chef leads the room.
