That is the everyday face of Pondicheri, the all-day Indian café Anita Jaisinghani opened at 2800 Kirby Drive in Upper Kirby. Jaisinghani was a James Beard Best Chef: Southwest semifinalist in 2012, 2017 and 2018, then a Best Chef: Texas finalist in 2020, and her cookbook Masala drew a James Beard media nomination in 2023.

The Kitchen

Jaisinghani was born in India, raised in a Sindhi family, and trained as a microbiologist before she cooked professionally, a background that shows in a kitchen that treats spice as chemistry.
