About Nok by Alara

The guinea fowl spring rolls land before the menu does, dusted with the same dry spice as the suya, and they set the register: Nigerian street food rebuilt with a French hand. Nok occupies the ground floor of Alára, the David Adjaye-designed concept store that opened on Victoria Island in 2015, and it has spent the years since arguing that African cooking belongs in a serious dining room.

The Kitchen

Executive chef Pierre Thiam, the Senegalese-American cook who built Teranga in New York and championed West African grains long before it was fashionable, sets the direction. His jollof rice is cooked over wood for smoke, his suya is plated rather than skewered, and the Abula — a Yoruba pairing of amala, ewedu and gbegiri — arrives with beef for ₦24,000, treated with the seriousness most kitchens reserve for a tasting course.
