About Central

Virgilio Martínez and Pía León built a menu organised by altitude, from Pacific shoreline to Andean ridge, and Central reads like a map of Peru on the plate. The restaurant moved to Av. Pedro de Osma 301 in Barranco in 2018, took the World's 50 Best No.1 spot in 2023, and runs its Mundo Central tasting at about S/1,004. The Kitchen

Martínez opened Central in 2009 and, with Pía León running the kitchen alongside him and their research arm Mater Iniciativa, turned it into a study of Peruvian ecosystems. The Mundo Central tasting climbs and descends by elevation: dishes named for the sea, the desert, the high Andes and the Amazon, each built from ingredients sourced at that altitude, from rocoto and cushuro to Amazonian cacao. Central reached No.4 in the world in 2018, held No.1 in Latin America's 50 Best repeatedly, and was named the world's best restaurant in 2023. León's own room, Kjolle, sits in the same building. The Room

The room is calm and architectural, concrete and warm wood, with sightlines to a working kitchen and tables set for a long, attentive meal. Conversation stays easy; the sound level is a low hum rather than a roar, and lighting is dim and even. Around fifty seats turn once a night, so the pace never feels rushed. Dress is smart casual, and the full tasting takes close to three hours.
