About Mauro Colagreco at Raffles London
When Raffles opened inside The Old War Office on Whitehall in 2023, its flagship restaurant came from Mauro Colagreco, the Argentine-Italian chef behind three-Michelin-starred Mirazur on the French Riviera, once ranked the world’s best restaurant. The London room earned its own Michelin star in 2025, months after opening. It is one of the most ambitious arrivals in our London dining guide and a benchmark for the capital’s vegetable-forward fine dining.
The Kitchen
Colagreco built his name at Mirazur on a garden-first philosophy, and he has carried it to Whitehall: the menu lists more than seventy varieties of British fruit and vegetable first, with protein in a supporting role. The signature dish is simply called Lettuce — red oak leaves grown on an urban farm in Elephant and Castle, plated with smoked haddock, sesame chips and a vermouth-and-cockle sauce — a plate that captures the whole approach in one course. The five-course tasting menu runs £165 per person; a limited-edition flower menu has also appeared at £175 for five courses and £205 for seven.
Wine flights split into themed routes, including an Exploration pairing at £125 and a prestige Leisure route. The cooking is technically elaborate but the produce always leads. The Room
The dining room sits on the ground floor of the restored War Office, all high ceilings, heritage detailing and the quiet confidence of a grand hotel restaurant. Tables are well spaced and the sound level stays low, so this is a room for conversation that needs to be heard and not overheard. Lighting is soft and warm, service is formal without being starchy, and the dress code leans smart — jackets are the safe call. It is built for an occasion rather than a casual drop-in.
Best for Impressing Clients
Book this room to impress a client or mark an anniversary for three reasons: the pedigree speaks for itself, from Mirazur to a London Michelin star; the vegetable-led menu gives the table something genuinely distinctive to discuss; and the grand-hotel setting signals that the evening matters. A typical scene: a quiet corner table, the Lettuce course arriving to murmurs, a considered wine flight pacing the night. Reserve well ahead, especially for weekends. Not for
Not for a casual or budget evening: at £165 before wine, in a formal hotel dining room, this is a special-occasion tasting menu rather than a spontaneous night out.
