"Madrid's most theatrical one-star Japanese — Julián Mármol's omakase served inside a recreated wartime bunker, Michelin-starred since 2019."
About Yugo The Bunker
Yugo The Bunker hides on Calle de San Blas, just off Atocha in central Madrid. Chef Julián Mármol's concept splits over two floors: an upstairs izakaya, and a downstairs room built as a precise recreation of a Second World War Japanese bunker, complete with period detail.
It has held a Michelin star since the 2019 Guide, cooking Japanese haute cuisine with a Mediterranean accent. It belongs in our Japanese and tasting-menu coverage for both the cooking and the setting.
The Kitchen
Mármol works only with top product, sourced from Alaska to the Ebro Delta by way of Japan and Portugal, and serves it across two tasting menus: 'Clásicos del bunker', a run of the most celebrated dishes, and 'Evolution', the newer, more experimental menu. An omakase progression of nigiri and Japanese-Mediterranean plates is the heart of it, with an optional sake pairing.
The cooking is exacting and restrained — classic Japanese technique applied to ingredients you would not expect, rather than fusion for its own sake.
The Room
The upstairs izakaya is the more relaxed face; the downstairs bunker is the experience — a low, atmospheric room recreated down to the fittings, where the meal feels like a private occasion. Counter seating puts you close to the work.
The bunker runs on a members-and-booking basis and seats are limited, so it is closer to a reservation-only club than a walk-in restaurant.
Not for
Not for a casual or budget night, large groups or anyone after a quick bite — it is a small, booked-ahead one-star tasting experience, dinner-led and pricey.
