About Restaurant Kontrast

Restaurant Kontrast sits in a stark, glass-fronted space in Oslo's former industrial Vulkan quarter, steps from the Mathallen food hall. Chef Mikael Svensson, Skåne-born and trained under Martín Berasategui and Quique Dacosta in Spain, opened it as a one-star and was promoted to two Michelin stars at the 2024 Nordic ceremony, where the kitchen also took a Michelin Green Star for sustainability. The name is the philosophy: contrast runs through the international team, the spare dining room and the dishes themselves. Tasting menus come in two lengths, the shorter Medium Kontrasts and the longer Big Kontrasts, with wine and non-alcoholic pairings.

The Kitchen

Svensson cooks organic, ethically sourced Norwegian produce almost exclusively, with wild line-caught fish, organic or wild meat and locally grown vegetables. State-of-the-art preserving turns trim and surplus into house garums and vinegars, and a much-photographed pine bark cake closes the meal. This is fine dining built on technique and restraint rather than luxury imports.

The Room

The dining room is deliberately austere: concrete, pale wood and clean lines that put the plate at the centre. Service is precise but warm, and the open kitchen gives the meal a quiet sense of theatre. It is a room that rewards full attention, which makes it a natural choice for a milestone.
