Khao Soi Zisters is the bowl travellers walk out of town for in our Pai guide and a standout on the Thai map of the north. Run by two sisters - hence the name - at 58 Wiang Tai, a relaxed ten-to-fifteen-minute walk from Pai's Walking Street, it serves northern Thai food from their grandmother's recipes in a small, cosy room.

It is the kind of unpretentious specialist that earns a destination reputation on a single dish, and Pai's khao soi conversation tends to start here.

The Kitchen

The signature is khao soi - the northern Thai coconut-curry noodle soup, a rich, gently spiced broth poured over soft egg noodles and topped with a tangle of crisp fried noodles, served with chicken (gai), beef or pork. Around it sit khanom jeen nam ngiao, the region's tomato-and-pork rice-noodle soup, plus Thai standards and a few vegetarian and tofu options. The recipes come from the sisters' grandmother and taste like it - homemade rather than tweaked for tourists.
