About Impronte

Impronte sits in a former tram depot. Cristian Fagone and his wife Francesca Mauri took the spare, industrial shell in Bergamo Bassa and opened the restaurant in 2017; by the 2026 Michelin guide it held a star. Fagone trained in two of Italy's most demanding kitchens, the three-star Le Calandre and the two-star Miramonti l'Altro, and he cooks with that precision while leaving his Sicilian roots in plain sight.

The clearest read on the kitchen is the grilled skewer of veal liver and sweetbreads, cooked over fire with a Tropea onion baked in salt, grilled lettuce and an iced salmoriglio. It is offal handled without apology: the timing has to be exact or the liver turns to grit, and here it stays just pink. Fagone's reinterpreted Sicilian street food, down to a grilled stigghiola, runs alongside the more composed courses.

The room is restrained: bare concrete and brick from the depot's past, simple tables, an open pass along one wall. The noise floor stays low, which makes Impronte a serious lunch room in a city that otherwise does loud trattorias.
