About Salvia

The road to Salvia winds north from Ibiza Town through pine forests and terraced farmland, climbing towards the rural municipality of Sant Miquel de Balansat — a part of the island that the summer crowds have not yet fully colonised. At kilometre 10.2 on the Sant Miquel road, a discrete sign marks the turn into Ca Na Xica, a boutique hotel estate that has become one of the island's most considered luxury addresses. Salvia is the estate's restaurant, and it is the reason to make the journey.

Chef Pablo Carrizo arrived at Salvia carrying one of the most impressive CVs in Spanish gastronomy. He has cooked at elBulli, Celler de Can Roca, Quique Dacosta, Berasategui, Paco Roncero, and Carme Ruscalleda — in other words, at six of the most technically demanding kitchens in Europe. What he brought to this quiet Ibizan estate was not the showmanship those addresses might suggest but something quieter and more lasting: absolute command of technique applied to the finest local ingredients.

The menu is Mediterranean in its bones and international in its ambition. Ibizan herbs — the island has its own wild fennel, rosemary, and the salvia (sage) that gives the restaurant its name — appear throughout the menu. Fish from the surrounding sea, vegetables from the kitchen garden, local cheeses: the sourcing is principled and the cooking does justice to it. International elements — a Japanese sensibility in raw preparations, a French precision in sauces — add depth without obscuring origin.

Salvia provides all three at a level Ibiza's beachfront restaurants — however spectacular — cannot match.
