The room itself received a transformation that preserved the lakeside view while introducing the bold, dramatic aesthetic Major Food Group deploys in all its properties: rich reds, dark woods, crisp white tablecloths, and captains in full service regalia. The tableside service programme is the kitchen’s most theatrical element. Everything that can be presented at the table is presented at the table. Dover sole arrives whole and is deboned in front of you. The salt-baked branzino is broken open tableside. The lobster fettuccine arrives in its copper-bottomed pan. What to Order

The Salt-Baked Branzino is Carbone Riviera’s defining dish.
