About Fusion19

Most restaurants in Playa de Muro sell paella to sunburned tourists three doors from the beach. Fusion19 sits on the same street, surrounded by the same crowd, and yet operates at an altitude entirely its own. A Michelin star earned in 2023 and a Repsol Sun awarded in 2025 confirm what any honest look at the island's fine-dining map already shows: this is the most quietly ambitious kitchen in the north of Mallorca.

The restaurant is the work of two chefs — Aleix Serra and Marc Marsol — who met at culinary school in Catalonia and have built Fusion19 into the precise opposite of a tourist-season table. Their cooking sits at the intersection of Mallorcan ingredient culture and continental European technique, held together by a phrase they return to often: “ingredients, memories and influences.” The restaurant runs its own vegetable garden on the outskirts of Alcudia, which means whole sections of the menu come in each morning already knowing what they want to become.

Two tasting menus structure the evening. ‘Esencia’ is the shorter, more focused journey — a distillation of the kitchen's current thinking. ‘Plenitud’ is the longer, more theatrical option, expanding the same ideas across additional courses and giving Serra and Marsol more room to show off. Both rotate with the seasons, but two dishes have achieved near-signature status and tend to reappear in new guises: the ‘Albufera’ — a study in duck and foie gras that takes its name from the wetland reserve just outside the door — and ‘Tambor’, an ice-cream dish executed with an older Mallorcan technique that nobody else bothers to practise.

The dining room is a modern volume with a winter-garden feel: glass walls, a visible kitchen, and a glass-fronted wine cellar holding more than 400 references. The list leans heavily into small Balearic producers and Spanish naturals, and the pairing is worth ordering for the education alone. Service is warm without being intrusive, and the room never feels full even when it is.

Best for a Birthday

Fusion19 is Mallorca's most generous birthday table. The room is full of natural light in the early evening and takes on a softer, candle-and-wine character as the sun goes down — a long arc that suits a dinner built around someone rather than merely held near them. The tasting format ensures a birthday meal is something the whole table experiences together, dish by dish, rather than six separate dinners that happen to share a tablecloth.

The kitchen handles celebrations quietly. Mention the occasion when booking and Serra and Marsol will typically send out a small personalised course without turning the evening into a performance — exactly what you want when the person being celebrated is the kind who loves good food but loathes being sung at. The pacing of the longer ‘Plenitud’ menu is especially well suited to this: enough ceremony to feel like an event, enough warmth to feel like a meal.
