The Kitchen

Brandt cooks modern French with quiet Asian accents and a Mediterranean hand. The Royal Miyagi oyster arrives with wasabi and small pearls of liquid ice cream; the snapper comes from Key Largo down the coast, the venison from New Zealand. A cheese trolley sourced through a specialist importer closes the savoury run, and the pairing comes either as a classical wine flight or a carefully built non-alcoholic alternative. The kitchen is a single open pass that Brandt works from directly, so each plate reaches you from the hands that made it.

The Room

The room is low-ceilinged and residential, more private salon than hotel dining room. The light is dim and warm, the tables set well apart, and the service is European-formal — several servers to a table, plates set down in unison.
