The Restaurant

Les Crayères occupies a Louis XVI-style château built in 1902 by the Marquise de Polignac — daughter of one of the founding families of the Pommery Champagne house — on thirteen acres of private parkland south of central Reims. The property opened as a Relais & Châteaux hotel and restaurant in 1983 under Gérard Boyer (who earned three Michelin stars before retirement); since 2009 chef Philippe Mille has held the kitchen, currently at two stars with a longstanding reputation as one of France's most refined technical practitioners.

The dining room — Le Parc — is the formal restaurant of the property, seating sixty across a classical space with tall windows facing the gardens. The cooking is classical French of the most disciplined kind: foie gras preparations, turbot preparations, pigeon preparations that demonstrate exactly how the haute cuisine vocabulary is meant to be executed. The tasting menus run €190 for lunch, €340 for the full dinner tasting with Champagne pairings. The property also operates a more informal brasserie, Le Jardin, for guests who prefer a shorter meal.

The wine cellar focuses overwhelmingly on Champagne — including vintages from the Pommery house dating to the early 20th century — and includes a serious Burgundy section curated over forty years. The sommelier is one of the most decorated in France. The service is formal at the absolute highest level, including separate bread, cheese, water, and wine service personnel — a configuration now rare even in Parisian three-star restaurants.
