About Dasheene

Nigel Mitchel, a Soufrière native, has run the kitchen at Ladera for more than two decades, which makes him one of the longest-serving fine-dining chefs in the Caribbean. His room, Dasheene, sits 1,000 feet up on a ridge between the Pitons, open to the air with no wall on the side facing the mountains. The view is the most famous in St. Lucia, and the cooking holds its own against it: a six-course island tasting from $135, built on produce grown on the resort's own land.

The Kitchen

Chef Nigel Mitchel cooks modern versions of St. Lucian classics, and he makes the breads, pastas and ice creams in-house. The signature is Shrimp Dasheene, the dish the room is named for, alongside an Old-Fashioned Pepper Pot and a Green Fig and Saltfish that reworks the national dish. Much of the produce comes from Ladera's 17-acre property, often picked the morning it is served, and the Creole fish changes with the day's catch.

The six-course tasting starts at $135 a head in the intimate Wine Room, paired from one of the largest cellars on the island at more than 170 bottles. Mitchel's tenure is the credential the resort leans on, and Ladera bills him as a James Beard honoree; the restaurant ranks among Soufrière's top tables on Tripadvisor as of 2026. The Room

The room is open-air and built around the view. Two of its walls are simply missing, so the Pitons fill the space and the light shifts from gold to dark over dinner. Tables are generously spaced, the sound level is low, and the lighting drops to candle-bright after sunset. Dress is smart-casual resort wear, and the setting is adults-only in the evening, which keeps the mood calm. At 1,000 feet on a winding ridge above Soufrière, it feels private in a way few view-restaurants manage.

Best for a Proposal

Book this room for a proposal because the setting does half the work. The Pitons frame the table, the sunset lands during dinner, the room is quiet and adults-only, and the six-course tasting gives the evening a proper arc. Ask for a sunset seating and a table on the open edge. It works just as well for a milestone birthday or a high-stakes client dinner where the view closes the deal. Not for

Not for budget travellers or large groups. It is adults-only resort fine dining on a winding ridge above Soufrière, and the bill climbs fast once wine joins the tasting.

Frequently Asked

Is Dasheene at Ladera worth it?

Yes, for the setting and the cooking together. Dasheene sits 1,000 feet up between the Pitons with the best view in St. Lucia, and chef Nigel Mitchel backs it with a $135 six-course tasting built on produce from the resort's own land. The value is in the occasion, not the price, so treat it as a milestone dinner and book a sunset table.

How hard is it to book Dasheene?

Plan ahead. Dasheene takes reservations through OpenTable and directly with Ladera, and sunset seatings on the open edge go first, especially in high season. Call +1 844-785-8242 or book online a week or more out. Non-resort guests are welcome but should reserve early, since the winding drive above Soufrière makes walk-ins impractical.

What is the dress code at Dasheene?

Smart-casual resort wear. There is no jacket requirement, but most guests dress for an occasion given the price and the setting, so a collared shirt or a nice dress fits the room. The evening service is adults-only, which keeps the mood calm. Neat resort clothing is fine; beachwear is not, and the open-air ridge can cool after sunset.

What should I order at Dasheene?

Order the six-course tasting at $135 in the Wine Room for the full range, or build a meal around Shrimp Dasheene, the dish the room is named for. Add the Old-Fashioned Pepper Pot and the Green Fig and Saltfish for the St. Lucian classics, and ask about the day's Creole fish. Pair from the 170-plus cellar.

Is Dasheene good for a proposal?

Yes, it is one of the best in the Caribbean for it. The Pitons frame the open-air room, the sunset lands during dinner, and the adults-only evening keeps it quiet and private. Book a sunset seating on the open edge and the setting does the rest. See our best restaurants for a proposal for more.
