The gastro-botanica concept is not a marketing construct. Chef Tan has developed a genuine vocabulary around plant-derived flavours — herb-aged fish, florally infused broths, preparations that use the botanical gardens themselves as a conceptual larder. The tasting menu moves through courses that reference the setting: a smoked preparation recalls the ancient banyans visible from the dining room window; a flower-based dessert sequence celebrates what is currently in bloom in the gardens outside. The cuisine is simultaneously intellectually rigorous and emotionally warm.
The setting is the most extraordinary available in Singapore dining. The bungalow's verandah, which can be used for pre-dinner cocktails, overlooks lawns that recede into primary forest. The dining room — teak floors, high ceilings, ceiling fans, colonial furniture updated with contemporary precision — creates an atmosphere of colonial Singapore that is historically resonant without being nostalgic in a way that excludes anyone. The Michelin star is deserved; the setting is irreplaceable.
