Métis opened on Jalan Petitenget in 2009, chef Nicolas 'Doudou' Tourneville's project with the art dealer Said Alem after a long career through the south-of-France hotel circuit. It is the largest serious kitchen on the island: 350 covers laid out as linked pavilions — an open-air garden room with reflecting pools, an indoor pavilion under a teak-and-thatch roof, a cocktail lounge, and a gallery that rotates exhibitions. It reads less like a restaurant than a Mediterranean villa scaled up to hold a crowd.
