About Ever

The story of Curtis Duffy is one of American fine dining's most extraordinary narratives. Raised in difficult circumstances, he trained under Charlie Trotter and Heston Blumenthal's mentor Ferran Adrià, then opened Grace in 2012 — immediately earning two Michelin stars. His journey through personal tragedy, professional collapse, and reinvention was documented in the film For Grace (2015). When he returned with Ever in July 2020, during the depths of a pandemic, Chicago understood that something important had arrived.

Ever is located at 1340 West Fulton Street in Chicago's West Loop, in a space designed with austere elegance: clean lines, warm woods, an open kitchen visible from the dining room. The 8-to-10-course tasting menu ($325 per person) changes seasonally and focuses on the precise treatment of proteins from land and sea, with each course designed as a study in technique made invisible. The food does not announce itself. It persuades.

The Chicago Tribune awarded Ever four stars — its highest honour — immediately upon opening. The two Michelin stars followed the next guide cycle. The World's 50 Best Discovery list has consistently placed Ever among Chicago's most significant restaurants.

The Duffy Method

Duffy's cooking philosophy prioritises classical technique deployed in the service of modern sensibility. His sauces are classical French — constructed over days — but the flavours they enhance are deliberately contemporary: lighter, more acidic, less opulent than the French canon that trained him. His fish cookery in particular is exceptional: precise temperatures, clean finishes, accompaniments that never compete. Vegetables receive treatment equal to proteins — there is no hierarchy on Ever's menu.

The sommelier program has assembled a serious cellar with particular strength in Burgundy, Loire, and the natural-wine producers of northern Italy. Wine pairing runs approximately $150 per person and demonstrates the kitchen's confidence in letting the beverage lead as often as it follows.

Why Ever for Closing a Deal

Ever has a specific quality that makes it ideal for business dinners: the room is serious without being oppressive, the service is efficient without being intrusive, and the meal proceeds at a pace that accommodates conversation rather than competing with it. The tasting-menu format eliminates the decision friction of ordering and creates a shared experience that builds rapport. Bringing a contact to Ever signals that you take quality seriously and that you consider the relationship worth the investment. The two Michelin stars do the rest of the work.

Why Ever for Impressing Clients

Ever's reputation extends beyond Chicago's dining cognoscenti. Any client with sophisticated dining experience will recognise the two Michelin stars and the West Loop address as significant markers. The kitchen's output — technically immaculate, emotionally resonant — will speak to any guest regardless of their familiarity with Chicago's restaurant scene. This is cooking that communicates excellence without explanation.
