The Verdict

Christian Têtedoie moved his restaurant to the crest of Fourvière hill in 2011, into a sheet-glass pavilion that looks straight down the Saône toward the confluence. The view does half the selling; the kitchen does the rest. Têtedoie wears the Meilleur Ouvrier de France collar he won in 1996 and a Michelin star he has held for years, and he cooks Lyonnais grandeur without the heaviness the city is known for.

The Kitchen

The dish to order is the HTV — Homard Tête de Veau — a Têtedoie invention from 1987 that sets blue lobster against a crisp cromesquis of calf's head, sharp and rich in one bite. Around it runs a modern Rhône-Alpes repertoire: pan-fried ris de veau with aubergine, raspberry and sorrel; a soft cheese soufflé finished with black-olive ice cream, rhubarb and hibiscus. Tasting menus run €97 to €145, with a €65 weekday lunch and a full all-lobster menu at €195 for the indulgent. The plating reads like a small art exhibition — Têtedoie is a serious collector, and it shows on the plate.

The Room

The dining room is a glass box on the hill's edge, all light and horizon, with Le Bistrot one level down serving the same kitchen at €27 lunch and €44 dinner. Service is formal but warm, paced for a long evening. The window tables are the ones to request: they hold the whole city in frame as the light drops over the rooftops.
