Thomas Keller's Most Romantic Room

The original Surf Club was founded in 1930 in the then-small town of Surfside, just north of Miami Beach, as a private members' club for the American elite. Frank Sinatra swam in its pool. Winston Churchill stayed in its cabanas. The building was restored and integrated into the Four Seasons in 2017, and it was at this point that Thomas Keller — the only American chef to hold Michelin three-star status at two restaurants simultaneously, with The French Laundry and Per Se — chose it as the site of his first Florida restaurant.

The result is one of the most beautiful dining rooms in the greater Miami area: plush banquettes in ivory leather, amber-hued lighting, handsome vintage bar, and the kind of Art Deco detail that makes contemporary restaurant design look hastily assembled by comparison. Keller has spoken about wanting to honour the building's history while reinterpreting the Continental American cooking that would have been served here in its original era. He has succeeded with characteristic precision.

The room has the atmosphere of a private club that has just admitted you. There is a hush, a weight, a sense that the people dining here understand where they are and have made a deliberate choice to be here. It is one of the few Miami dining rooms where the ambience score genuinely exceeds the food score — and the food score is exceptional.

What to Order

The Crab Cake with Spicy Mayonnaise and Coleslaw is Keller's interpretation of an American classic — lighter than you expect, more technical than it appears, possessed of a clarity of flavour that reveals what crab actually tastes like when you don't bury it. It is the kind of dish that makes you realise how rarely you have eaten crab cake that respected the crab.

The Maine Lobster Thermidor with Sauce Américaine is the kitchen's most ambitious statement: a classic preparation executed at the highest level, presented with the visual confidence of a restaurant that believes in its own cooking. The sauce — rich, bisque-like, made from the lobster shells — is the kind of thing you finish with bread after the lobster is gone and feel no shame about.

The Coconut Chiffon Cake with Lime-Flecked Crème Anglaise ends the meal with the same classical confidence that characterises everything here: a dessert that achieves genuine elegance through restraint rather than complexity.
