Vail's Original Fine Dining Institution

When owner-chef Paul Ferzacca opened La Tour in 1998, he was filling a conspicuous absence in a resort town that had every other amenity except a genuinely serious restaurant. Nearly three decades later, La Tour has outlasted every competitor that arrived in its wake and remains the restaurant against which all Vail fine dining ambitions are measured. The wine programme alone — Wine Spectator's Best of Award of Excellence, and a collection of Domaine de la Romanée-Conti that is among the finest in Colorado — would justify the reservation. That the food has kept pace is the achievement that defines La Tour's longevity.

The menu is described accurately as Asian-accented modern French, but that framing undersells its range. The Asian influence arrives in the form of technique and flavour rather than fusion spectacle: the lobster-avocado salad derives its sophistication from restraint; grilled octopus tossed with Marcona almonds occupies the territory between Mediterranean and modern French with unusual authority. The entrées are built around updated classics — duck à l'orange reimagined with hibiscus-infused leg confit, yellowfin au poivre in Cognac-apricot sauce — that reward diners who have eaten the originals and can appreciate what the revision adds. The menu changes seasonally; the commitment to precision does not.

Wine & The Cellar

The wine programme is the most serious in Vail and one of the finest in mountain America. The Wine Spectator Best of Award of Excellence recognises cellars that demonstrate breadth, depth, and genuine curatorial intelligence; La Tour's collection earns the recognition through Burgundy depth that includes multiple vintages of Domaine de la Romanée-Conti, alongside a California selection that covers the serious producers, a Rhône programme of unusual quality, and an Italian section that goes beyond the predictable. The sommelier staff navigates this cellar with the confidence of people who have drunk extensively from it; their recommendations are worth following.

The Room & Patio

The dining room occupies a warm, lively space that manages the difficult balance between formal and animated. The room does not feel institutional; it feels like someone's very good idea of what a fine dining restaurant in a mountain village should be. The patio is La Tour's seasonal masterpiece — a lush outdoor space in East Meadow Drive that, on a clear Colorado evening with the Gore Range visible above the rooflines, is among the most beautiful dining settings in the American West. The Zagat "Extraordinary" rating did not capture a room; it captured the patio on an evening when everything aligned.
