Grant Achatz built Alinea to be the best restaurant in America. Then he built Next to ask a different question entirely: what if a restaurant never served the same menu twice? Not seasonally different, not chef's-whim different — but categorically different. New cuisine. New era. New country. New concept. Every menu cycle, Next reinvents itself from the ground up, presenting guests with an entirely new culinary world to inhabit for an evening.

Located at 953 West Fulton Market — across the street from Alinea — Next operates on a ticketed model that Achatz pioneered and that the broader restaurant industry has since attempted to emulate. Guests don't make a reservation in the traditional sense; they purchase tickets for specific dates and times, at price points that vary depending on seat location and menu cycle. The model eliminates no-shows and aligns the restaurant's economics with the theatre and concert industry it consciously references.

The 2026 programme — "Grace, Greed, Glam" — moves from the precision and tranquility of Japan in winter to the excess of Wall Street 1987 in spring, to the haute couture world of fashion in autumn. Each transition involves a complete reimagining of the room, the menu, the service style, the mise en place, and the beverage programme. The kitchen team essentially opens a new restaurant several times a year.
