Chef Rainer Becker's internationally acclaimed izakaya concept arrived here from London, Tokyo, and Dubai carrying a reputation for contemporary Japanese cooking and an atmosphere that made business feel like pleasure.

It still does. The ground-floor setting within the Epic Hotel places Zuma directly on the Miami River, with waterfront views that make every table feel like a destination rather than a default choice. The interior — warm timbers, exposed stone, Japanese minimalism that never tips into austerity — is genuinely beautiful. This is a room that flatters its occupants and their intentions.

The concept is izakaya: the Japanese tradition of informal eating and drinking, elevated here to a level that has little in common with its street-level origins but retains the essential philosophy of food as shared experience. Dishes arrive continuously, in no fixed order, driven by the kitchen's timing rather than a structured menu progression. This creates the fluidity of a real power lunch — you're not anchored to a course-by-course script, you're engaged in conversation punctuated by genuinely excellent food.

What to Order

The Robata grill is the kitchen's defining feature and its most reliable source of excellence. Black Cod with Barley Miso — Zuma's signature dish across all its global locations — arrives lacquered with an almost impossibly deep glaze, sweet and savoury simultaneously, the fish yielding with the gentlest pressure of a fork. Order it first. Order it every time.

Beyond the cod: the Spicy Beef Tenderloin with Crispy Shallots is a study in textural contrast. The Crispy Lobster with Ponzu is a weekend indulgence. The sushi and sashimi selection reflects sourcing standards that most Miami sushi restaurants cannot match — the bluefin tuna, in particular, is as good as the city offers.

The Weekend Brunch, priced from $108 per person, has developed its own cult following among Miami's Sunday crowd. The format includes unlimited dishes from a rotating selection, with optional champagne pairings escalating from house bottles to rare and vintage selections. It is the most consistently spectacular brunch in the city.

Best For: Impressing Clients and Closing Deals

Zuma functions as Miami's most reliable Impress Clients venue for three reasons: reputation, atmosphere, and the implicit message that whoever chose this table has taste and knows how this city works. Every serious Miami business person knows Zuma. Bringing someone here says something before a word is spoken.

As a Close a Deal setting, the shared dining format creates exactly the right energy. The food gives you permission to be warm — to share, to recommend, to make choices on behalf of someone else. This is the food of hospitality rather than performance. By the time the black cod arrives, the formality has dissolved.

For Birthday and group occasions, the shared format scales extremely well. A table of eight or ten eating robata and sushi is one of Miami's most enjoyable group dining experiences. Book early — Zuma's private dining spaces accommodate larger parties, but they fill quickly.

Practical Details

Reservations are essential for dinner and recommended for lunch. Walk-in availability at the bar counter exists but cannot be relied upon. The dress code is smart-casual in Miami's interpretation — well-constructed casual wear is acceptable; anything that looks like it came off a beach is not. Parking is available at the Epic Hotel valet. The restaurant's waterfront terrace, when available, is one of the more spectacular outdoor dining settings in the city.
